Three primary Italian Recipes

Italian food is very diverse in both ingredients and flavor. Many people tend to connect Italian food with the thought of pastas and tomato-topped bread, but there is much more to Italian cooking than that! Soups, savory breads, saucy meat dishes, and delicate desserts are just a few of the great dishes that Italian cuisine has to offer. This narrative features three of my popular authentic Italian recipes. I hope you enjoy them!

Sicilian Succo

12 OUNCES EQUALS HOW MANY CUPS

Ingredients:
4 cloves garlic (chopped)
3 (29-oz) cans tomato sauce
4 (6-oz) cans tomato paste
1 tbsp chopped parsley (fresh) + further 1 tbsp
1 tbsp chopped fresh basil (fresh)
2 lbs ground beef
1 lb ground pork
1 cup dry bread crumbs
1 cup grated Parmesan cheese
1 tsp garlic powder

Directions:
In a large pot, mix the chopped garlic, tomato sauce and paste, 1 tbsp parsley, and basil. Bring this sauce to a boil, then turn the heat down to low to simmer the sauce. In a bowl, mix together the pork, beef, bread crumbs, parmesan cheese, 1 tbsp parsley, and garlic powder. Mix this together well, then form into balls almost the size of a golf ball. Fry the meatballs in a skillet in very hot olive oil until they are completely cooked. Add the meatballs to the sauce blend and cover. Allow it to simmer on low for about four hours. Serve over noodles of your choice.

Italian Sausage Soup

Ingredients:
1 lb Italian sausage
1 garlic clove (minced)
2 (14-oz) cans beef broth
1 (14.5-oz) can Italian-style stewed tomatoes
1 cup sliced carrots
1 (14.5-oz) can great Northern beans (un-drained)
2 small zucchini (cubed)
2 cups packed spinach (rinsed well and torn into pieces)
1/4 tsp ground black pepper
1/4 tsp salt

Directions:
Use a large stock pot to brown the sausage and garlic. When the sausage has browned, add in the broth, carrots, tomatoes, and salt and pepper. Cut the heat to low, then cover the pot and simmer for 15 minutes. Add in the beans (including the liquid) and the zucchini. Cover the pot again and simmer for someone else 15 minutes (or until the zucchini has become tender). Remove from the heat, then add the spinach. Put the lid back on so the heat from the rest of the soup cooks the spinach (about 5 minutes). Serve hot with a nice Italian bread.

Tiramisu

Ingredients:
1 cup sugar
1/2 cup sweet Marsala wine
6 egg yolks
1 lb Mascarpone cheese at room temperature
(Mascarpone substitute: 2 (8-oz) packages cream cheese, ½ cup heavy cream, 5 tbsp sour cream)
1 1/2 cups hot water
5 tsp instant coffee powder
1/2 cup coffee-flavored liqueur
12 ounces ladyfingers or sliced sycophant cake
Unsweetened cocoa (for dusting)
1 ounce semi-sweet chocolate (grated) - optional

Directions:
In a bowl, mix 1 1/2 cups of hot water with the instant coffee. Stir until the coffee has dissolved, then add the liqueur. Dip in 1 ladyfinger at a time, speedily turning it to coat. Remove it from the liquid and place it on the lowest of an 8 x 8-inch dish. Line all coffee-coated ladyfingers side by side until most of the pan's lowest is covered. Pour half of the mascarpone cheese (or cream cheese mixture) over the top of the ladyfingers. Add someone else layer of coated lady fingers and cheese. Refrigerate this for about 4 hours, or until the sweetmeat is firm. Just before serving, dust the top with cocoa. Decoration with the grated semi-sweet chocolate (if desired) and cut into squares to serve.

Best of the Best Italian Cream Cake

Ingredients:

1-cup Buttermilk,

12 OUNCES EQUALS HOW MANY CUPS

1-teaspoon Baking Soda,

5-large Eggs, separated,

2-cups Sugar,

1-stick Butter, soft,

½-cup Shortening,

1-teaspoon Vanilla,

1-cup Pecans, chopped,

1-can Coconut, shredded,

2-cups Flour.

Instructions:

Cream shortening, butter, sugar and egg yolks in a large bowl; add flour and buttermilk; mix well; add coconut, pecans, vanilla and beat well. Beat egg whites in a separate bowl until stiff and fold them into cake mixture. Bake at 325° for 30 to 35 minutes in 3 layered pans. Let cool before frosting.

Frosting:

4-tablespoons butter 1-teaspoon vanilla,

8-ounces cream cheese 1-box powdered sugar,

1-cup Walnuts, chopped.

Mix and spread frosting on layers. Place 1/3 cup of chopped walnuts on first layer of icing, add 1/3-cup of chopped walnuts to 2nd layer of icing. close spreading frosting on top and sides of cake and finally place 1/3-cup of chopped walnuts on top.

Serves 8 to 10

Note: This cake can be made into a one layer cake by baking it in a 9x13-inch baking dish, but it is not near as good. other fun and great idea is to add three to six drops of food coloring, depending on how vibrant you want the color to be. I add the food coloring sometimes to the cake and icing and sometimes just to whether the cake or the icing. I pick my colors by the holidays, for example I pick red or green for Christmas.

Stocking Your Italian Pantry

Is your pantry full of all the basic ingredients you will need to generate an array of Italian recipes ranging from the simplest of desserts to the most involved main course? Having just a few uncomplicated items on hand will give you the foundation you need to all of your favorite Italian style foods.

In many primary Italian kitchens you will find most of these items:

- Dried Pasta: Have a variety of distinct types of dried pastas on hand for manufacture a amount of distinct Italian themed meals. Use your favorite store brand or head to the local specialty store and buy a good imported brand made from semolina flour.

- Canned Tomatoes: distinct types of canned tomatoes will be needed for manufacture the most basic as well as the most involved Italian recipes unless you only want to use fresh tomatoes. Pizza supper Rolls Recipe

What You Need

1 pound ground beef, cooked, drained 1 12 ounce jar pizza sauce 1/2 cup pepperoni, diced 1 1/2 cups mozzarella cheese 1/4 cup onions, diced 1/4 cup green peppers, diced 1/2 cup mushrooms, diced Salt and black pepper to taste 4 8 ounce cans refrigerated crescent style supper rolls

How to Make It

Preheat the oven to 350 degrees Fahrenheit.

Lightly coat a baking sheet with nonstick cooking spray and set aside.

Brown the ground meat over medium heat in a skillet breaking apart the larger pieces as the meat cooks. Drain the beef.

In a large mixing bowl, integrate the jar of pizza sauce, the cooked and crumbled beef, diced pepperoni, mozzarella cheese, diced onions, green peppers, and mushrooms with salt and black pepper to taste. Mix well to integrate all of the ingredients.

Separate the refrigerated crescent style supper rolls into rectangular pieces and spread each one out to make the dough thinner.

Spoon a tablespoon of the beef mixture onto the pieces of dough then roll each one up starting with the long side.

Place the pizza supper rolls with the seam side down on the treated baking sheet and bake for 12 to 15 minutes or until they are golden brown.

Serves 10 to 12
