Steamed Shrimp Dumplings Recipe For Weight Watchers

Ingredients:

4 cups water
3 tbsp chopped scallion (green onions), divided
1 tbsp peach minced pared gingerroot, divided, reduced-sodium soy sauce, and rice vinegar
1 large garlic clove, minced, divided
1 tsp Chinese sesame oil
1/2 tsp granulated sugar
5 ounces shelled and de-veined shrimp
10 wanton skins (wrappers), 3x3-inch squares

Method:
o In 12x8-inch microwavable baking dish microwave water on High (100%) for 10 minutes, until boiling.

o In cup or small bowl, combine 1 tbsp scallion, 2 tsp ginger root, the soy sauce, vinegar, 2 tsp garlic, the oil, and sugar; stir to combine.

o In work bowl of food processor combine shrimp, remaining 2 tbsp scallion, remaining 1 tsp ginger root, and remaining garlic and process, suing on-off motion, until mixture forms a paste, 1 to 2 minutes,

o On work surface spread out wanton skins.

o Spoon an equal amount of shrimp mixture (about 1 heaping teaspoonful) onto center of each wonton skin.

o Lightly moisten inside edges of 1 wanton skin with water; bring edges together, forming a dumpling and enclosing filing.

o Repeat procedure, making 9 more dumplings.

o Arrange dumplings on microwavable rack that is large enough to hold 10 dumplings in a single layer and set rack on baking dish of boiling water.

o Loosely cover rack with plastic wrap and microwave on Medium (50%) for 4 minutes.

o Brush each dumplings with an equal amount of soy sauce mixture, reserving remaining mixture; re-cover and microwave on Medium for 4 minutes.

o Serve with remaining soy sauce mixture for dipping.
Makes 2 servings, 5 dumplings each

Cappuccino Mousse Recipe - For Weight Watchers

Ingredients:

2 tsp unflavored gelatin
1/2 cup plus 2 tbsp low-fat milk(1 percent milk fat)
1 ounce semisweet chocolate, grated (reserve 1 tsp for garnish)
1 1/2 tsp instant espresso coffee powder
1 tsp vanilla extract
10 ice cubes
Cold water
6 egg whites
1 tbsp granulated sugar
3/4 cup thawed frozen dairy whipped topping, divided

Method:

1. In 1-quart saucepan sprinkle gelatin over milk and let stand for 1 minute to soften; cook over medium heat, stirring constantly, until gelatin is completely dissolved, about 1 minute.
2. Add chocolate, espresso powder, and vanilla; cook, stirring constantly, until chocolate is melted.
3. In large mixing bowl combine ice cubes and enough cold water to cover.
4. Transfer chocolate mixture to medium mixing bowl.
5. Set bowl of chocolate mixture in bowl of ice water and let stand, stirring frequently with a rubber scraper, until mixture is cool to the touch and the consistency of egg whites, about 2 minutes.
6. Using an electric mixer on medium speed, in large mixing bowl beat egg whites and sugar until soft peaks form; set aside.
7. Remove bowl of chocolate mixture from ice water.
8. Using a rubber scraper, stir 1/4 cup of the whipped topping into the chocolate mixture; fold in 1/4 cup whipped topping.
9. Fold in the beaten egg whites, one third at a time.
10. Into eight 6-ounce dessert dishes spoon a n equal amount of the mousse mixture.
11. Refrigerate overnight or at least 2 hours.
12. To serve, top each portion with 1 1/2 tsp of the remaining whipped topping and 1/8 tsp of the reserved chocolate.
