Yummy Old Fashion Cookie Recipes - Maple Nut Triangles and Date Pecan Ball Cookies

Forget those bagged cookies in the grocery store and make your family some delicious old fashion cookies using my Maple Nut Triangles recipe. This maple flavored cookie with walnuts and chocolate frosting is well worth your time. If you aren't fond of maple, try the Date Pecan Ball Cookies. These delicious little gems, rolled in powdered sugar, are very tasty.

MAPLE NUT TRIANGLES

12 OUNCES EQUALS

Bake at 350 degrees for 10 to 12 minutes.

Cream together.....1 cup butter, 2/3 cup firmly packed brown sugar, 1 tsp maple flavoring, and 1/2 tsp salt. Cream well.

Add gradually......2 cups sifted Pillsbury (of course) all-purpose flour and 3/4 cup finely chopped walnuts. Mix thoroughly and chill dough for a few minutes for easy rolling.

Divide dough into three equal parts

Roll out..........1 part at a time on a floured surface. Roll into a large rectangle 12 x 9-inches in size. Cut rectangle into twelve 3x3-inch squares. Cut each square in half, diagonally, to make two triangle. Place on ungreased baking sheets.

Bake..............in moderate 350 degree oven for 10 to 12 minutes. Cool on baking sheet 1 minute. Cool thoroughly on wire rack. Frost with chocolate frosting (recipe follows). Garnish with 1/3 cup finely chopped walnuts.

CHOCOLATE FROSTING:

Melt a 1-ounce square of chocolate in top of a double boiler over boiling water. Add 2/3 cup sweetened condensed milk. Continue to cook 5 minutes, stirring constantly, until thick. Add 1 teaspoon cold water, 1/2 teaspoon vanilla and 1/2 teaspoon maple flavoring. Continue cooking and stirring until of spreading consistency.

DATE PECAN BALL COOKIES

1 cup butter, softened
1/2 cup sugar
2 tsp vanilla
2 cups sifted flour
2 cups ground pecans
1 cup whole date, cut up
powdered sugar for rolling cookies

Cream butter and sugar together. Add vanilla to sugar mixture and stir to mix in. Add the flour and mix well. Fold the pecans and dates into the mixture. Using a teaspoon, take dough into your hands and roll into balls. Refrigerate balls for 1 to 2 hours. Bake balls in a preheated 350 degree oven on a greased cookie sheet for approximately 20 minutes. Remove cookies from pan and roll into powdered sugar. After cookies have cooled, sprinkle more powdered sugar over them.

Super Chocolate Cookies

Super Chocolate Cookies

Ingredients:

12 OUNCES EQUALS HOW MANY CUPS

½-cup Walnuts, chopped

8-ounces Cream cheese, softened

1-teaspoon Vanilla

1-stick Butter, softened

1-large Egg

1-box (18¼-ounces) Chocolate cake mix

12-ounces Chocolate frosting

¼-cup Powdered sugar

¼-cup Sprinkles

Instructions:

Preheat oven to 350°. Beat Butter, vanilla, and cream cheese until smooth. Add egg; beat at medium speed until well blended. Add cake mix; beat at low speed for about 2 minutes or until aggregate is smooth; stir in chopped walnuts. Shape cookie dough into 1-inch balls and place 1-inch apart on cookie sheet sprayed with cooking spray. Bake for 8 minutes, cookies will look under baked, but they are not. Let cookies stand on cookie sheets for 5 minutes; replacement to foil or wire racks to cool completely. Spoon 1 teaspoon of chocolate frosting and spread over cookie; sprinkle each cookie with powdered sugar and sprinkles.

Makes about 4 dozen cookies

Note: Sometimes to change these up I substitute the vanilla with other citation such as strawberry extract.

Top 5 Christmas Cookies to Make For the Holidays

As the Christmas Holiday gets closer, it is time to start thinking about baking those Christmas cookies that everyone loves. They are nice to have around the house for those visitors that stop by to wish you a happy holiday. They are also nice to take to the office, to share during the coffee break, and they make nice gifts for friends and family alike.

Here are 5 all time favorites to try.

12 OUNCES EQUALS

Apricot Coconut Delight
1- cup salted butter, softened
1- 8 oz cut sour cream
2- cups all-purpose flour
1/4 teaspoon salt
1/2 cup flaked coconut
1/2 cup apricot preserves (not jelly)
1/2 cup chopped pecans or other nuts of your choice.

1. In a large bowl, cream together the butter and sour cream until light and fluffy. Combine the salt and flour and gradually add to the creamed mixture. Mix well. Divide the dough into four equal parts. Wrap each part in plastic wrap. Refrigerate for from 3 to 4 hours or until easy to handle.

2. In a small bowl, combine the apricot preserves, coconut flakes and chopped nuts. set aside. On a lightly floured surface, roll out each portion of sough until it is 1/8 inch thick.

3. Cut into 2-1/2 inch squares, spread each square with a rounded teaspoon of the apricot mixture. Very carefully fold one corner over the filling. Moisten the opposite corner with water and fold over the first corner to seal.

4. Place on an ungreased baking sheet, about 1/2 inch apart. Bake at 350 degrees for 17 - 20 minutes or until lightly brown. Remove from oven and place on a wire rack to cool.

Haystacks
2+1/2 cups semisweet chocolate chips
2+ 1/2 cups butterscotch chips
1- 12 oz. container of chopped nuts. Pecan or peanuts work great.
8- ounces of chow mein noodles.

Melt butterscotch and chocolate chips in the top half of a double boiler over hot water. (Bring the water to a boil, then stop the boil and work with the hot water.) Make sure that the water does not get into the melting chips. Stir in the nuts, then the noodles. Using a teaspoon, drop spoonfuls onto a waxed paper lined cookie sheet. Let cool. Store covered in the refrigerator.

Peanut Butter Cookies
1+1/4 cups all purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 large Egg
1/2 cup super fine sugar
1/2 cup salted butter
1/2 cup creamy peanut butter (you can change up with chunky peanut butter if you like chunky better)
1/2 cup brown sugar.

1. Shift together flour, salt, baking soda and baking powder.
2. In another bowl Cream butter with sugar, brown sugar and peanut butter, creaming after each addition until light and fluffy.
3. Add the egg to the peanut mixture and mix thoroughly.
4. Gradually add the flour mixture and beat until smooth. (if using chunky peanut butter, mix allowing for the peanuts.
5. Drop the mixture onto a ungreased baking sheet, one teaspoon full at a time, spaced about 2 inches apart.
6. Flatten with a fork, then turn the fork 180 degrees and flatten again to make a crisscross pattern on the top of the cookie.
7. Bake in a 350 degree oven for 9 - 11 minutes. Remove and place on a cookie rack to cool.

Pecan Meltaways
1 cup of butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2+1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup chopped pecans
4 ounces granulated pecans for coating
4 ounces confectioners' sugar for coating.

1. In a large bowl, cream the butter, 1/2 cup of confectioners' sugar and vanilla until light and fluffy. Combine the flour and salt: gradually add it to the creamed mixture and mix well. Refrigerate until well chilled.
2. Remove from refrigerator, roll into 1 inch balls and place onto ungreased baking sheets.
3. Bake at 350 degrees for 10 to 12 minutes.
4. While they are baking, mix the 4 ounces of confectioner's sugar and the 4 ounces of granulated pecans together.
5. Roll the warm cookies in this mixture, remove and let cool. Once cool, roll them in the mixture once again. These are sure to become one of your favorite cookies.

Lemon Drop Cookies
1/2 cup butter, softened
3/4 cup granulated sugar
1 Large Egg
1 teaspoon grated lemon peel. (This is sometimes available at your local spice shop, or you can make your own.)
1 tablespoon half and half
1+1/2 cups all-purpose flour
4 ounces (1/2 cup) crushed lemon drops
1 teaspoon baking powder
1/4 teaspoon salt

1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, lemon peel and half and half.
2.Combine the flour, lemon drops,baking powder and salt, gradually adding it to the cream mixture, and mix well.
3.Drop, by rounded teaspoonfuls onto greased baking sheets, about 3 inches apart.
4. Bake at 350 degrees for 8 to 10 minutes or until the edges start to brown lightly.
5.Remove from oven, let cool for 2 to 3 minutes before placing on wire racks to complete the cooling process.
6.If you can find them, it is nice to add a small candied lemon slice on top of each cookie. Ask your local bakery, they use them to decorate cakes and might be willing to sell you some. You will need about 4 dozen, as this recipe makes about that many cookies.

The Holiday Season is a great time to gather the family in the Kitchen and bake cookies together. If you have children, here is where those memories are made. Be sure to make enough, because they have a way of disappearing before you know it.

Vegan Holiday Baking - Pumpkin Chocolate Chip Cookies

Soft, spicy, and generously sized, these decadent vegan Christmas cookies are the exquisite holiday treat or an ideal finale to your vegan holiday feast.

If you're new to vegan baking, you may be wondering how to work colse to the eggs that most baking recipes call for. The respond is finding the right egg substitute for the dish you're creating. In non-vegan recipes eggs are commonly used to whether supply leavening or act as a binder, or both. Vegan egg substitutes do the same, but distinct substitutes supply differing degrees of binding and leavening. Any of the vegan egg replacements listed below will work well in these cookies.

Ener-G Powdered Egg Replacer, ready on-line and in many condition food stores. Highly recommended. Banana, mashed. Half a banana equals one egg. Applesauce and baking powder. 1/4 cup applesauce mixed with 1/2 tsp baking powder equals one egg. Cornstarch and baking powder. One heaping Tbs. Cornstarch and a small pinch of baking powder mixed with two Tbs. Water equals one egg.

One of the best things about these cookies is that they store very well - in fact, they precisely get good if they're made in advance. For optimal flavor, make these cookies a day or so in advance and store in an air-tight holder until you're ready to serve.

Ingredients:

1 cup Nucoa or Butter-Flavored Crisco

2 cups white sugar

2 "eggs" (see vegan egg-replacement options above)

2 teaspoons vanilla extract

1 15 ounce can pumpkin pie filling (for a less sweet cookie, use a can of pumpkin puree)

4 cups flour

1 1/2 tsp baking soda

1 1/2 tsp baking powder

1 tsp salt

1 tsp cinnamon

Pinch ground nutmeg

1 cup semisweet chocolate chips (the cheapest ready are usually dairy-free)

Have two greased cookie sheets ready. Preheat oven to 375 degrees.

Put shortening and sugar in a large mixing bowl. Using an electric beater, cream until smooth. Beat in "eggs." Stir in vanilla and pumpkin until well blended.

Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg in someone else mixing bowl. Stir into the pumpkin mixture. Add chocolate chips.

Drop eight round tablespoons of dough onto each cookie sheet. Cookies will spread as they bake. Bake 10-12 minutes, or until edges begin to brown. Let cookies stand for a few minutes before removing from baking sheets to cool completely.

Re-grease sheets and repeat baking process. Store in air-tight containers until ready to serve.
