A Few Tips for Mixing Holiday Drinks

The holidays are here, and everybody wants to come to your house. I'll show you how to be ready to make a great variety of fun and festive holiday drinks to serve to your guests.

Here are a few tips to help you prepare your home bar and make yourself into a spectacular, bartender if the opening calls for it. This is what you need to have on hand to make those spectacular, holiday drinks.

12 OUNCES EQUALS HOW MANY CUPS

Remember, mixing drinks isn't hard to do. If you can consequent a recipe, you can mix a drink.

Not all of us have a home bar installed in our houses. So, if the list below appears daunting because you have a space issue, just keep these items (the ones that don't need refrigeration!) in a plastic box with a lid and store in a closet or garage until you need to pull them out for your holiday party.

Handy Vessels and Tools

- Jigger portion - with half and quarter ounces clearly marked

- Jazzy chrome cocktail shaker

- Measuring spoons

- Glass stirring rod or long bar spoons

- Bar strainer

- Can opener

- Bottle opener

- Corkscrew

- Small sharp knife

- Mortar and pestle or wooden muddler

- Ice bucket with tongs

- Lemon/lime squeezer

- galvanic blender

- Small bar towels

Useful Glassware

- 3-4 oz. Long-stemmed cocktail glasses

- 8-12 oz. Highball or Collins glasses

- 6 oz. Champagne flutes

- 4 oz. Old-fashioned glasses

- Lemons

- Limes

- Oranges

Seasonings

- Salt and Pepper

- Worcestershire sauce

- Tabasco or other hot sauce

- Sweet flavorings

- Grenadine

- Maraschino liqueur

Even if you are already a specialist bartender, there are all the time a few bartender tips to keep handy - particularly when the holidays arrive.

For instance, do you know how to make one of the main ingredients of quite a few mixed drinks? It's called uncomplicated syrup, and like the name implies, it's very uncomplicated to make ahead of time.

Simply, dissolve 1 pound of granulated sugar in 8 ounces of warm water. Stirring constantly, add an additional 8 ounces of water until the sugar is fully dissolved. Then, store the syrup in a jar with a tight-fitting lid and use when called for. How easy is that? I guess that's why it's called uncomplicated syrup!

With the holidays all the time seemingly nearby the corner, here are a few more items you might want to have handy - especially for those specialty drinks:

- Peppermint candy or candy canes

- A block of bittersweet chocolate for grating

- Colored sugar for rimming glasses.

And here are some additional tips for bartenders that you might find useful:

- Serve cocktails icy cold. If possible, store your tool in the freezer for a few hours before using.

- Have lots of cracked ice on hand. You must discard the ice in the cocktail shaker once you've mixed the drink. And all the time use fresh ice if the cocktail is "on the rocks."

- It's not a time-saver, but drinks seem to taste better when mixed individually - especially drinks like martinis and whatever with carbonation in the mix. Use a clean, chilled glass for each cocktail - even for refills.

- Be sure you contain non-alcoholic choices when serving drinks and all the time encourage your guests to drink responsibly.

Enjoy the holidays!

Holiday Tart and Sweet Cranberry Pie

Not every person likes cranberries, but many habitancy who do can't wait for the holiday to come around for their chance to load up on tart and sweet cranberries. Give this a try and it may come to be one of your favorite holiday dessert recipes.

Cranberry pie goes back to the developing nation of America where it was a tasteless simple dessert formula among Shakers. An offshoot of the Quakers, its founder mother Ann Lee was born in Manchester, England in 1743, persecuted there and in 1774 emigrated to America with seven followers. eventually eleven communities were founded in New England and New York.

The Shakers were among the best cooks America has ever had. They were responsible for many simple, but ingenious inventions to make household work easier. Many of the Shaker dishes were meatless dishes using nuts, mushrooms, lentils, rice and cheese. Many of these are favorites of vegetarians today.

Cranberry pie is one of the many recipes that came from their well-tended orchards. This is a very simple dessert formula that uses only one saucepan, development it easy to clean up! I make this formula using a prepared pie crust you can find in the refrigerator section of your market. All you have to do is unroll the crust, without using a rolling pin and put it in your pie pan.

Holiday Tart and Sweet Cranberry Pie

Ingredients

3 Cups fresh cranberries (12 ounces)
1 Cup raisins
1 Cup water
1 1/2 Cups sugar + 1 tablespoon
1/4 Cup all-purpose flour + 1 teaspoon
1 teaspoon vanilla
Pastry for 2-crust 9-inch pie

Directions

In saucepan, couple cranberries, raisins, and water. Bring to boil; cook 3 minutes.

Mix sugar and flour. Stir into hot cranberry mixture. Remove from heat. Cook and stir till thickened and bubbly.

Stir in vanilla.

Put 1 teaspoon flour in 9-inch pie plate and shake the plate to cover. Line plate with pastry. Spoon in hot cranberry mixture. Add top crust, cutting slits for steam to escape. Sprinkle top crust with added 1 teaspoon (or more) of sugar. Seal edges and flute.

Bake at 400 degrees for 30 - 35 minutes. (Cover edges with foil to preclude over browning, if necessary.)

Cool before serving.

Vegan egg-replacement options

12 OUNCES EQUALS HOW MANY CUPS

If you're new to vegan baking, you may be wondering how to work colse to the eggs that most baking recipes call for. The respond is finding the right egg substitute for the dish you're creating. In non-vegan recipes eggs are commonly used to whether supply leavening or act as a binder, or both. Vegan egg substitutes do the same, but distinct substitutes supply differing degrees of binding and leavening. Any of the vegan egg replacements listed below will work well in these cookies.

Ener-G Powdered Egg Replacer, ready on-line and in many condition food stores. Highly recommended. Banana, mashed. Half a banana equals one egg. Applesauce and baking powder. 1/4 cup applesauce mixed with 1/2 tsp baking powder equals one egg. Cornstarch and baking powder. One heaping Tbs. Cornstarch and a small pinch of baking powder mixed with two Tbs. Water equals one egg.

One of the best things about these cookies is that they store very well - in fact, they precisely get good if they're made in advance. For optimal flavor, make these cookies a day or so in advance and store in an air-tight holder until you're ready to serve.

Ingredients:

1 cup Nucoa or Butter-Flavored Crisco

2 cups white sugar

2 "eggs" (see vegan egg-replacement options above)

2 teaspoons vanilla extract

1 15 ounce can pumpkin pie filling (for a less sweet cookie, use a can of pumpkin puree)

4 cups flour

1 1/2 tsp baking soda

1 1/2 tsp baking powder

1 tsp salt

1 tsp cinnamon

Pinch ground nutmeg

1 cup semisweet chocolate chips (the cheapest ready are usually dairy-free)

Have two greased cookie sheets ready. Preheat oven to 375 degrees.

Put shortening and sugar in a large mixing bowl. Using an electric beater, cream until smooth. Beat in "eggs." Stir in vanilla and pumpkin until well blended.

Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg in someone else mixing bowl. Stir into the pumpkin mixture. Add chocolate chips.

Drop eight round tablespoons of dough onto each cookie sheet. Cookies will spread as they bake. Bake 10-12 minutes, or until edges begin to brown. Let cookies stand for a few minutes before removing from baking sheets to cool completely.

Re-grease sheets and repeat baking process. Store in air-tight containers until ready to serve.
