Steamed Shrimp Dumplings Recipe For Weight Watchers

Ingredients:

4 cups water
3 tbsp chopped scallion (green onions), divided
1 tbsp peach minced pared gingerroot, divided, reduced-sodium soy sauce, and rice vinegar
1 large garlic clove, minced, divided
1 tsp Chinese sesame oil
1/2 tsp granulated sugar
5 ounces shelled and de-veined shrimp
10 wanton skins (wrappers), 3x3-inch squares

Method:
o In 12x8-inch microwavable baking dish microwave water on High (100%) for 10 minutes, until boiling.

o In cup or small bowl, combine 1 tbsp scallion, 2 tsp ginger root, the soy sauce, vinegar, 2 tsp garlic, the oil, and sugar; stir to combine.

o In work bowl of food processor combine shrimp, remaining 2 tbsp scallion, remaining 1 tsp ginger root, and remaining garlic and process, suing on-off motion, until mixture forms a paste, 1 to 2 minutes,

o On work surface spread out wanton skins.

o Spoon an equal amount of shrimp mixture (about 1 heaping teaspoonful) onto center of each wonton skin.

o Lightly moisten inside edges of 1 wanton skin with water; bring edges together, forming a dumpling and enclosing filing.

o Repeat procedure, making 9 more dumplings.

o Arrange dumplings on microwavable rack that is large enough to hold 10 dumplings in a single layer and set rack on baking dish of boiling water.

o Loosely cover rack with plastic wrap and microwave on Medium (50%) for 4 minutes.

o Brush each dumplings with an equal amount of soy sauce mixture, reserving remaining mixture; re-cover and microwave on Medium for 4 minutes.

o Serve with remaining soy sauce mixture for dipping.
Makes 2 servings, 5 dumplings each
