Flan, pronounced "Flahn" (rhymes with "plan") is a Mexican Creme Caramel dessert normally baked in molds submerged in a water bath. It is positively found in many Mexican restaurants but few people make it at home because they have the perception that Flan is difficult to make. Actually, it is quite easy.
Most commonly, Flan is made in personel servings from Flan molds, but it can also be made as one large pie shaped dish. You can buy molds designed specifically for making Flan but any smooth-sided, oven-safe porcelain, glass or non stick metal 8 ounce dish will work.

Here is the method for Basic Flan:
Ingredients:
* 3/4 cup granulated sugar
* 1 (12 oz.) can of evaporated milk
* 1 1/2 cups whole milk
* 4 large eggs
* 1 tablespoon honey
* pinch of salt
* 1 teaspoon vanilla extract
Directions:
1. Place sugar in a saucepan over medium heat, stir permanently as sugar melts. The sugar will brown and turn to liquid. Watch determined so as not to scorch
2. Remove from heat and immediately distribute the caramelized sugar equally across the bottom of the flan molds. Tilt and roll the molds so the liquid sugar mix coats the sides of the molds
3. In a mixing bowl consolidate remaining ingredients and whisk together until the eggs are totally blended.
4. Pour equal amounts of the custard composition in the flan molds
5. Pour about an inch of water into a large roasting pan. Set on an oven rack and then place the molds in the roasting pan
6. Set oven to 350 degrees F and bake for one hour
7. After 1 hour insert a knife into the center of one of the molds and if it comes out clean, the flan is done
8. Remove from oven and cool to room temperature
9. To serve, run a knife around the top of the flan where it contacts the mold. Flip over the mold onto a serving plate and then jiggle the flan loose so that it falls in one piece onto the plate.
Notes:
* Be sure to stir permanently when melting the sugar or it will burn.
* Do not put too much water in the roasting pan or it will run over the sides of the molds into the Flan.
* However, do not allow all the water to evaporate from the roasting pan.
* The ended Flan may be stored in the refrigerator until ready to serve.
* When serving, you may adornment the top of the Flan with whipped cream or fresh fruit (strawberries or sliced bananas are good).
* Do not endeavor to Remove the Flan from the molds until wholly cooled.
